Gray Whale Gin begins with our 6-times distilled, gluten-free corn base spirit. It’s the perfect blank canvas for our botanicals to come together and create a distinctly Californian flavor profile.
Next, we prepare our sun-dried perfecting California botancials by carefully weighing and inspecting them for the correct flavor profile. Fresh lime, fir needles, and mint are tightly packed into a giant tea bag, which hangs over the base spirit and allows the liquid to begin to absorb the aromatic flavors in the still.
Finally, the most important step in our process — the botanical distillation. Alcohol vapors from our base layer delicately heat the botanical mixture, causing the spirit to absorb the flavors. Once cooled and condensed, the fresh Gray Whale Gin rests for 48 hours to establish the harmonious balance of taste and aroma.
